Citrus Salad
This is such a refreshing and delicious salad.

Serves 6

Ingredients

2 ea Hearts of romaine
2 ea Oranges
1 ea Grapefruit
1/3 C Olive oil
3 Tb Orange marmalade
3 Tb Vinegar
3/4 C Red onion, chopped

Salt and pepper to taste

Instructions

Wash the romaine and chop into bite sized shreds. Chop onion. Peel the fruit with a knife and cut out sections (supremes). Whisk together oil, vinegar, marmalade, salt and pepper. Toss the lettuce, dressing and onions. Top with fruit and serve.

Brussels Sprouts With Bacon
These are not the horrible Brussels sprouts our parent tormented us with. These are wonderful. Some of the little leaves fall off and get all crisp and caramelized. Yum.

Serves 4

Ingredients
1 lb Brussels sprouts
1/4 lb Bacon, diced

Instructions

In a skillet over medium heat add bacon and Brussels sprouts and saut� until bacon is crisp and sprouts are caramelized; about 10 minutes.

Orange Glazed Carrots
Delicious, nutritious and a kid favorite, this colorful dish is fast and easy.

Serves 4

Ingredients
3 C Carrots, peeled and sliced
1 Tb Butter
1/4 C Marmalade

Instructions

Cook the carrots in boiling water until just done and drain reserving 1/4 cup of cooking water in a bowl. Add butter to carrots to melt. Add marmalade to reserved cooking water and stir to combine. Add marmalade mixture to carrots, toss to coat and serve to raving applause.
